I hope everyone had a relaxing and delicious Thanksgiving holiday. This was the first year in 3 years that I didn’t go home for the Thanksgiving holiday. While it was tough not being with my family, I had an amazing time cooking with my boyfriend, who is now my fiancé.

Yes. Fiancé. *Insert goofy grin here*

Earlier in the week, he asked me if I wanted to go to Santa’s Wonderland in College Station. Seeing as Christmas is my absolute favorite time of the year (and it was in the same town as A&M), how could I say no? He made reservations for a horse-drawn carriage ride on November 29th, which came with free hot cocoa and access to Santa’s Town. I thought we were just going to look at Christmas lights, so I was my usual dorky self, providing unnecessary commentary while we rode through the woods. I noticed that he was really quiet, except for some humming/sighing sounds he was making. At the very end of the ride, he surprised me. With a dozen, lit-up Roman columns surrounding us, he turned to me and asked me to marry him. He was holding the most beautiful ring, but I didn’t even notice because I was looking so intently into his eyes. I didn’t want to break eye contact. I wanted to stay in that moment forever.

It’s still so surreal. I wake up every morning thinking it was all a really wonderful dream… until I look down at my left hand. We’re ecstatic and can’t wait to start this next chapter in our lives!

More details to come as we begin planning!

With Shyp, You’ll Never Have to Visit the Post Office Again

As I was getting my daily Fast Company fix, I stumbled upon something I wish I’d known about years ago. I don’t know about everyone else, but for me personally, going to the post office to ship something is a serious pain in my a$$. There are always long lines, I never know which size box I can get away with, or how expensive it’s actually going to be.

Introducing Shyp. Shyp is an iPhone app created by Kevin Gibbon and Joshua Scott that has redesigned every point in the shipping process. You can see how this new process works in the process diagram below:

1. Drive to Walgreens to purchase bubble wrap, packing tape, and cardboard boxes.

2. Walgreens has a box that will fit one of your items, but not the other, so you make a second trip to Office Depot to buy a larger box.

3. Once you get home, you go online to research shipping carriers and spend an unnecessary amount of time trying to distinguish the difference between “priority” and “first class”.

4. You pack the two boxes and drive to the UPS store, where you wait in line for half an hour. Four hours into the ordeal, you wonder why you didn’t just order from Amazon…

Sound familiar? Let’s give Shyp a whirl…

1. Open the Shyp app and take photos of the items you want to ship. Then, type in the two destinations and press the “Pick Up Now” button.

2. Within 15 minutes, a Shyp driver will arrive at your home and place each item in a Shyp microfiber bag labeled with a QR code which contains the mailing address.

3. You can go do whatever the heck you want while the professional packers at Shyp’s warehouse weigh the items, box them, and choose the most economical shipping carrier.

4. Four hours later, you pay the bill Shyp has emailed to you (for the shipping charges plus the $5 fee) via your iPhone.

Is this real life? This is a real thing? WHY DOESN’T ANYONE KNOW ABOUT THIS?!

Oh, and if you don’t have a subscription to Fast Company, I highly recommend that you sign up immediately. Like, right now. This magazine has inspired me in more ways than I can describe. And it’s the only “print” version of anything I’ll subscribe to… it’s that good!

A brief update…

Readers! My, my has it been awhile.

I’d like to apologize for my extreme absence over the past month. With the second (and final!) year of my Master’s program, jetsetting adventures (Germany, London, Amsterdam, and India), and tremendous workload, I’ve certainly let this blog fall further down my priority list. Interestingly enough, I decided to log into my account this morning to find that I’ve received more daily views in the past three weeks than my blog has seen over the course of a year. Obviously, there’s something here that people are looking for or finding useful which gives me that little spark of motivation I need to hop back on the blogging saddle.

I can’t promise that I will post everyday (duty calls), but I can promise that I’ll do my absolute best to post when I feel truly inspired and discover anything useful. I’m still trying to figure out this whole work-life-school-social balance. It’s coming along nicely, but I still have a ways to go :)

Tasty Tuesdays

I stumbled upon this mouthwatering recipe from Dinners, Dishes, & Desserts. Being Italian, I was immediately drawn in when I saw the recipe called for roasted garlic sauce topped with chicken, red onions, and herbs. All in all, it’s a healthier alternative to pizza and one I’ll definitely have to try in the very near future!
Serves 6
Prep Time: 15 min
Cook Time: 20 min
Total Time: 35 min

  • 1 pound pizza dough
  • 1 Tbls butter
  • 8 cloves roasted garlic, minced
  • 2 Tbls all-purpose flour
  • ½ tsp black pepper
  • ½ cup skim milk
  • ¼ cup half and half
  • ¼ cup Parmesan cheese
  • 1½ cup boneless skinless chicken breast, cooked and shredded
  • ¼ cup red onion, diced
  • ¾ cup Mozzarella cheese
  • 1 tsp fresh thyme, chopped
  • ½ tsp dried oregano
  • 1 Tbls fresh parsley, chopped
  1. Preheat oven to 450 degrees. Prepare a baking sheet with a siplat liner, or grease and sprinkle with cornmeal.
  2. Melt butter in a small saucepan. Saute roasted garlic for 1 minute.
  3. Add flour, and mix until well blended. Cook for 1 minute.
  4. Slowly whisk in the milk and half and half. Mix in the pepper.
  5. Cook for about 3 minutes, or until it starts to thicken. Remove from heat, and stir in Parmesan cheese.
  6. Spread dough into roughly a 12 inch circle on prepared baking sheet. Spread white cause over the dough. Top with chicken, red onions and cheese.
  7. Bake for 17 minutes, or until the crust is golden, and the cheese is melted.
  8. Remove from the oven, sprinkle with herbs. Cut and serve immediately.
